There was only ~20 twin-turbo ones, don’t think Saleen every released the full production numbers though. I recall a thread on the SVT forums years ago where it was decided the number was between 100 and 200 but who knows how accurate that is...

They made 21 Twin Turbo street cars, but made something close to 100 cars in total (including race cars)

The made 21 twin-turbo road cars and only a couple with the 1,000 hp upgrade.
Saleen said before the S7 entered production that they wanted to make 300-400 cars, although the never released any actual figures. The total number produced is probably a couple hundred.

I dunno but I’m thrilled to say I’ve seen one in person. No idea if it was a twin-turbo or not.
